Yesterday when I was getting off work, I had NO IDEA what I was going to blog about today. NO IDEA. I was getting worried, and had decided to go to the little corner market by my house after work to see if anything inspired me.
Fig and Whiskey Muffins

Oooo, I just fell in love with baking with whiskey after I made a scottish whiskey cake for my birthday. I will definitely have to make these!
These were OK the day I made them, but got SUPER tasty as the figs sat for longer in the baked muffins.
This recipe was originally a banana bread recipe, which is also exceptional – just sub 3/4c of mashed banana for the figs, and add a half cup of chopped nuts (and, of course, throw in some cinnamon, nutmeg, etc).
Dietplaid – do you have a good recipe for whiskey cake? I'd love to try it!
These sounds and look delicious! I love fresh figs, and am always looking for new ways to use them. Never thought about muffins – yum! The cream cheese in the batter sounds amazing… and of course, so does the whiskey!
I keep wanting to try this recipe with real cream cheese (like the amazing Sierra Nevada stuff at Rainbow), but I always wind up having to run to the corner store for Philly at the last minute.
I'm not good at planning.
There will be another batch of figs ripe next week, looks like. This time I plan on letting them ripen a little more on the tree.
